What for some is the happiest time of the year, is for others one of the hardest. On the winter solstice we’ll light candles together and share about where we see the light and love of God breaking through… even and especially in the darkest places in our lives.

Soup for December 21

Black Bean & Sweet Potato Chili
Serves 25

9 large sweet potatoes, peeled and cut into 1/2-inch cubes
3 large onions, chopped
4 tablespoons olive oil
6 tablespoons chili powder
9 garlic cloves, minced
3 teaspoons ground cumin
1 teaspoon cayenne pepper
5 cups black beans, rinsed and drained
1 can (28 ounces = 8-12 ounce can) diced tomatoes, undrained
3/4 cup brewed coffee
5 tablespoons honey
2 teaspoons salt
2 teaspoons pepper

Garnish with sour cream, cilantro, and shredded cheddar cheese

In a pot coated with olive oil, saute sweet potatoes and onion in until crisp-tender. Add the chili powder, garlic, cumin and cayenne; cook 1 minute longer. Stir in the beans, tomatoes, coffee, honey, salt and pepper.Bring to a boil. Reduce heat; cover and simmer for 30-35 minutes or until sweet potatoes are tender.
